1 cup peanut butter
1 egg
1/2 cup white sugar (or Splenda)
1/4 cup brown sugar (or replace with more white sugar/Splenda if you don't have brown)
1 tsp vanilla extract
Mix everything together in a mixing bowl. Scoop out tablespoonfuls of the dough and roll into balls. Place dough balls onto ungreased cookie sheet and lightly flatten them with a fork, making a crisscross pattern. Bake in preheated oven (175 deg C) for 10 minutes.

I also made a batch of these with chocolate chips stuffed in the middle of the dough balls, so that batch ended up with melted chocolate inside. Was so yum, but also peanut butter+chocolate is also very, very rich and makes one feel full in seconds!
I do kinda feel sorry for people with nut allergies (or any food allergies!) - peanut butter is ace! I'd hate to have to think about what I eat all the time, whether it's likely to kill me (or any less dramatic reactions) seconds after I swallowed it. :S
